Low Fat Lemon and Berry Cheese Cake

This super low fat dessert is perfect for guilt free indulgence! It's also pretty quick and easy to make, 
so you don't have to spend hours slaving away in the kitchen!
Ingredients

500g Amaretti Biscuits
2 egg whites
2 tubs of Quark cheese
Rind of 1 lemon
200g Icing sugar
Gelatin –optional

For the topping and the coulis
1 tub of raspberries, blue berries or
strawberries.
300mls of water
2oz icing sugar

1. Place the biscuits in a clean plastic bag and crush with a rolling pin. Mix together the egg whites and crushed biscuits in a bowl and then press the mixture into a cake tin lined with greaseproof paper. Put in the oven for about 15 minutes. Allow to cool.

2. Mix the 2 tubs of quark with the icing sugar and lemon rind. Add more icing sugar if required for taste. Also add the gelatin too at this stage (following the instructions on the packet) if preferred for a firmer setting.

3. Place the quark mixture on top of the cooled biscuit base and smooth down with a palette knife. Decorate with a some of the red berries and fresh mint leaves.

4. To make the coulis, add about 300 mls of water to the rest of the fruit and 1oz of icing sugar (or more if required for taste) simmer until the fruit is soft. Blend the mixture and allow to cool in the fridge. Serve a slice of the cheese cake with a drizzle of coulis over the top.
